Depends what for, but at least they must be 18 years or more.
To be the best witness, they must be isolated, but almost all of a witness merely to say "I saw this person sign it." Unless there is a risk that the person would lie about signing or being suspected of lying, it's not really what they are. The witnesses are rarely called to testify in court, it comes only when one party tries to deny that their signature is valid. Very few cases of contract law never stand or fail on that basis.
